Ingredients

  • 2 lbs ground beef (or turkey for a leaner option)
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 2 bell peppers (red and green), diced
  • 2 cans (15 oz each) kidney beans, drained and rinsed
  • 1 can (15 oz) crushed tomatoes
  • 2 cups beef broth
  • 2 tbsp chili powder
  • 1 tbsp cumin
  • 1 tbsp paprika
  • 1 tsp oregano
  • 1 tsp cayenne pepper (adjust to taste)
  • Salt and pepper to taste
  • Optional toppings: sour cream, shredded cheese, chopped green onions, fresh cilantro

Instructions

  1. Heat a large pot over medium heat with 1 tbsp oil.
  2. Sauté onion, garlic, and bell peppers until soft and fragrant (5–7 minutes).
  3. Add ground beef (or turkey) and cook until browned, breaking apart with a spatula (8–10 minutes).
  4. Stir in chili powder, cumin, paprika, oregano, cayenne, salt, and pepper. Cook 2 minutes.
  5. Pour in crushed tomatoes and beef broth. Add kidney beans and stir well.
  6. Bring to a simmer, reduce heat to low, and cover. Simmer at least 30 minutes (1–2 hours for best flavor).
  7. Taste and adjust seasoning before serving.

Notes

Chili tastes even better the next day as flavors meld. For extra spice, add jalapeños or hot sauce. To thicken, simmer uncovered longer or stir in a cornstarch slurry.
