Ingredients

  • 2 boneless, skinless chicken breasts (68 oz each)
  • 1 large head of broccoli, cut into florets (34 cups)
  • 2 Tbsp olive oil
  • 1 tsp garlic powder (or 2 cloves minced garlic)
  • 1 tsp dried Italian herbs (or thyme, oregano, basil mix)
  • Salt & pepper to taste
  • Optional: ½ lemon (juice + zest)
  • Optional: sprinkle of parmesan cheese

Instructions

  1. Preheat oven to 400°F (200°C). Pat chicken dry and season both sides with olive oil, garlic powder, Italian herbs, salt, and pepper.
  2. Toss broccoli florets with olive oil, salt, and pepper. Set aside.
  3. Bake chicken for 18–20 minutes until internal temperature reaches 165°F (74°C). Let rest 5 minutes under foil.
  4. Steam broccoli for 4–5 minutes until bright green and tender-crisp (or bake with chicken for roasted version).
  5. Slice chicken and serve with broccoli. Add lemon juice or parmesan if desired.
