Ingredients

  • 1½–2 lbs ground beef (or turkey)
  • 1 large onion, diced
  • 1 bell pepper, diced
  • 3–4 garlic cloves, minced
  • 1 (28-oz) can crushed tomatoes
  • 2 tablespoons tomato paste
  • 1 cup broth (beef or chicken)
  • 2 tablespoons chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • ÂĽ teaspoon cayenne pepper (optional)
  • Salt & pepper to taste
  • 2 (15-oz) cans kidney or pinto beans, rinsed and drained

Instructions

  1. In a large pot or Dutch oven, brown the ground beef over medium-high heat until no pink remains. Drain excess fat if desired.
  2. Add diced onions and bell pepper. Cook 4–5 minutes until softened. Stir in garlic for the last 30 seconds.
  3. Stir in chili powder, cumin, paprika, and cayenne. Cook about 1 minute to bloom the spices.
  4. Add crushed tomatoes, tomato paste, and broth. Scrape up any brown bits from the bottom of the pot.
  5. Bring to a boil, then reduce heat to low. Partially cover and simmer 45–60 minutes, stirring occasionally.
  6. Stir in beans 10–15 minutes before serving. Season with salt and pepper to taste.
  7. Serve hot with toppings like shredded cheese, sour cream, cilantro, or sliced jalapeños.

Notes

For richer flavor, let the chili simmer longer. Leftovers taste even better the next day. Add a splash of lime juice or vinegar before serving for a bright finish.
