Ingredients

  • 1 lb ground beef (or turkey)
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 green bell pepper, diced
  • 1 can (15 oz) diced tomatoes
  • 1 can (15 oz) tomato sauce
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) black beans, drained and rinsed
  • 2 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp paprika
  • Salt and pepper to taste
  • 1 cup beef broth (optional, for desired consistency)
  • Optional toppings: shredded cheese, sour cream, chopped green onions

Instructions

  1. In a large pot or Dutch oven, brown the ground beef over medium heat until fully cooked. Drain excess fat if needed.
  2. Add onion, garlic, and green bell pepper. Cook until softened, about 5 minutes.
  3. Stir in chili powder, cumin, paprika, salt, and pepper. Cook for 1 minute to bloom spices.
  4. Add diced tomatoes, tomato sauce, kidney beans, black beans, and beef broth (if using). Stir well.
  5. Reduce heat to low and let simmer for 20–30 minutes, stirring occasionally, until flavors meld.
  6. Taste and adjust seasoning before serving.

Notes

Simmer longer for a thicker chili. This recipe reheats well, making it perfect for leftovers or meal prep. Easily customizable with different beans or by skipping meat for a vegetarian version.
