Ingredients

  • 2 lbs (900 g) sweet potatoes, peeled and thinly sliced
  • 1 cup (250 ml) heavy cream
  • ½ cup (120 ml) milk
  • 1 garlic clove, minced
  • 2 tbsp butter, melted
  • 1 cup (100 g) grated Gruyère cheese (or cheddar for stronger flavor)
  • 1 tsp fresh thyme (or ½ tsp dried)
  • Salt and pepper to taste
  • ¼ tsp nutmeg (optional)
  • ½ cup grated Parmesan cheese (optional topping)
  • Chopped parsley for garnish

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Peel and slice sweet potatoes into thin, even rounds about ⅛ inch thick.
  3. In a saucepan, gently heat the cream, milk, garlic, thyme, salt, and pepper for 2–3 minutes until fragrant. Remove from heat.
  4. Grease a baking dish with butter. Arrange a layer of sweet potato slices, pour a bit of the cream mixture, and sprinkle grated cheese. Repeat layers until ingredients are used, ending with cheese on top.
  5. Cover with foil and bake for 35 minutes. Remove foil and bake an additional 20 minutes until golden and bubbly.
  6. Let rest 10 minutes before serving. Garnish with parsley or thyme and serve warm.

Notes

Slice sweet potatoes evenly for best texture. Use full-fat cream and Gruyère for the richest flavor. Let rest before serving to set layers beautifully.
