  • ½ cup unsalted butter (softened)
  • 2 tbsp olive oil
  • 2 tsp salt

  • 1 tbsp thyme
  • 1 tbsp rosemary, chopped
  • 1 tbsp sage, chopped
  • 1 lemon, halved
  • 1 onion, quartered
  • 4 garlic cloves, smashed
  • 2 cups chicken broth
  • 1 loaf day-old bread, cubed
  • ½ cup butter
  • 1 onion, finely chopped
  • 2 celery stalks, diced
  • 2 carrots, diced
  • 3 garlic cloves, minced
  • 1 tsp salt
  • ½ tsp pepper
  • 1 tsp dried sage
  • ½ tsp dried thyme
  • 1 tsp poultry seasoning
  • 1 cup chicken or turkey broth
  • 1 egg, lightly beaten
  • ¼ cup parsley, chopped

Instructions

  1. Thaw the turkey if frozen (3–4 days in refrigerator). Remove giblets and neck, pat dry, and loosen skin around the breast.
  2. Mix butter, olive oil, salt, pepper, garlic powder, onion powder, paprika, thyme, rosemary, and sage. Spread half under the skin and half over the top.
  3. In a skillet, melt butter and sauté onions, celery, and carrots for 7–8 minutes. Add garlic, sage, thyme, and poultry seasoning. Combine with bread cubes, broth, egg, and parsley until moist.
  4. Loosely stuff the turkey cavity with the mixture. Tie legs with kitchen twine and place on a roasting rack in a pan with onion, lemon, garlic, and broth.
  5. Preheat oven to 325°F (160°C). Cover turkey with foil and roast 3.5–4 hours, basting every 45 minutes. Remove foil during last 45 minutes to brown. Check internal temperature (165°F in thigh).
  6. Let rest 25–30 minutes before carving. Slice and serve with stuffing and gravy.
  7. For gravy, melt 2 tbsp butter, whisk in 2 tbsp flour, add 2 cups pan drippings, and cook until thickened. Season to taste.
